Pale straw-yellow color of medium intensity. The bouquet presents intense aromas of acacia flowers and exotic fruits that diffuse on the palate evoking agreeably intricate sensations in a perfect balance of body and freshness. The total absence of tannin makes this excellent and singular wine a pleasant experience whatever the occasion.
A great classic of the Italian wine-making tradition and a jewel in the crown of the north-east, the Pinot Grigio has always enchanted the palate for its full-bodiedness, combined with the delicacy that is typical of the white wines. The particular wine-making technique adopted for the ‘Goccia’ line permits the wine to maintain its full-bodied taste while conferring elegance and softness to the palate.
|Wine maker notes
|After the grapes have been hand-picked, selected on the vine at first light of dawn, the grapes are de-stemmed and the must obtained in this phase, the essence of the first pressing, is collected in specific heat-conditioned steel tanks and made into wine at controlled temperatures in the absence of oxygen. After this the wine is left ‘on the yeasts’ for about three months in steel vats, after which it is bottled and shelved to rest for the following two months.
|Excellent as an aperitif, it can easily be an accompaniment for fish dishes, also if strong and seasoned, for cold cuts and fresh cheeses. It should be served cool, at a temperature of around 10-12°C.
