The nose is light, elegant, and inviting, with notes of warm vanilla, caramel and freshly baked sugar cookies. A treasure for the palate. Delicately floral and fruity with notes of ripe banana, boiled sweets, vanilla, dark chocolate, coffee, spice and a lingering malt flavor infused with oak. Slieve Foy has a lovely, long finish–uncharacteristic for an Irish whiskey–with hints of maple sugar, coffee with cream and sugar, citrus and fudge.
This Single Malt gem is non chill-filtered, carefully aged for 8 years in American white oak casks originally used for bourbon whisky, and is bottled at an unprecedented higher proof.
