Color Delicate, golden yellow. Bouquet The bouquet displays white flower notes, including hawthorn and magnolia. Spicy hints of cinnamon underscore fresh honey tones. Palate Upright and lively, the Champagne is fine, sensual and elegant, finishing with a round persistence.
Wine Spectator 93 points - This Champagne is maturing, hitting the toast, coffee, roasted hazelnut and saline, mineral flavors I like. This is refined and beautifully integrated, featuring a silky texture and vibrant structure. Fine, truffle-infused aftertaste. Drink now through 2025. 200 cases imported. –BS (Jan 1 2010)

Wine maker notes
Within hours of picking, the Chardonnay grapes are brought to Perrier-Jouët’s private pressing house in Cramant, where they are gently pressed at a low pressure on the house’s traditional wooden presses. The juice is racked at 50° F, and then transported to Épernay for fermentation. In the cellar, modern stainless steel tanks provide precise temperature control for the alcoholic and malolactic fermentations of the base wine. A liqueur de triage of sugar, yeast and base wine is added to the bottle, and then the wine is aged on the lees in the house's historic champenois aging cellars.

Food pairing
The 2000 Fleur de Champagne Blanc de Blancs is ideal on its own, and also pairs perfectly and powerfully with caviar.
