This ultra-premium vintage in the collection is made in years of exceptional harvests, from Chardonnay grapes grown on two legendary vineyards: Bourons Leroy and Bourons du Midi.

|Within hours of picking, the Chardonnay grapes are brought to Perrier-Jouët’s private pressing house in Cramant, where they are gently pressed at a low pressure on the house’s traditional wooden presses. The juice is racked at 50° F, and then transported to Épernay for fermentation. In the cellar, modern stainless steel tanks provide precise temperature control for the alcoholic and malolactic fermentations of the base wine. A liqueur de triage of sugar, yeast and base wine is added to the bottle, and then the wine is aged on the lees in the house's historic champenois aging cellars.
