The fruit is sourced from the Astoria Estate vineyard “Val de Brun” in the rolling hills of Veneto just north of Venice. The vineyards are oriented north-south and west-east with 4,500 vines per hectare, with an average vine age of 12-years-old. The grapes are harvested by hand in small lots. A soft pressing occurs and the juice is placed in stainless steel tanks for a brief cold maceration. Before the primary fermentation process is concluded, the wine is run into a pressurized tank where a secondary fermentation takes place allowing it to become a sparkling wine. After bottling the wine is bottle aged for over 6 weeks before being released.

Pairs well with chicken, stuffed mushrooms, very food-friendly, prosciutto, pasta with creamy sauces, spicy dishes or seafood.
