CINGHIALE RATING 4.1
The oldest of the wines, obvious in its appearance and nose. Brick red with orange highlights. Woodsy, earthy and dead leaves nose-some funkiness. Great mature smooth taste with plenty of acidity and tannins left. Amazing balance and finesse. A more structured Barbera. 14 years old and still holding to its youth through an excellent balance of tannins, acidity and dark fruit. A really interesting Barbera that was also getting better everytime we drank it.
Destemming, pressing, maceration with the skins for about 8 hours, followed by controlled temperature fermentation. Aged in fine grain French oak barrique for 1 year.
