Intense straw yellow with green tinges
The enchanting intensity of its scents afford distinct profile on the nose with hints of yellow wild flowers, broom and acacia, blended with fruity nuances of white-fleshed fruit, apples and ripe peaches as well as of aromatic herbs and seaweed. Gentle yet unrelenting, it shines brightly for its elegance and body. Aristocratic and pure, it stands out among the great white wines grown at high altitudes.
The charm of its minerality is matchless. Marvelous for its rigorous style, it stands out for its force and roundness. The mouthfilling roundness of its imposing profile is a distinctive trait that makes it Mount Etna’s archetypal wine.
Once again, Firriato has done a great job across the board with virtually their entire range, no small feat at production levels within the context of Italian wine.
Firriato’s 2010 Etna Bianco Cavanera Ripa di Scorciavacca, a higher-end Carricante/Cataratto blend, shows lovely volume and breadth from aging in oak that serves to balance the more mineral tendencies of the Etna. Spices, crushed rocks, white peaches and mint are all woven together beautifully. The Ripa di Scorciavacca is impeccable from start to finish. Anticipated maturity: 2013-2014
|Carricante 80% and Catarratto 20%
|Its character stands out with refined dishes. It finds a perfect balance with trout pate with caviar, asparagus in Hollandaise sauce, fowl liver, potato gnocchi with herbs. Perfect with smoked cold cuts and goat’s milk cheese served with olive oil, pepper and seasonings.
