Organic wheat is grown and harvested at a local, family owned and operated organic wheat farm in Idaho. The grain is stripped from the wheat stalks and milled into flour.
The organic wheat flour is loaded into a cooking vessel along with water. The mixture is heated to convert starch into sugar. The resulting “mash” is transferred to a fermentation tank.
Yeast is added to the organic mash and fermented for two to four days turning sugar into alcohol.
Fermented mash is transferred to the first of four distillation columns where it is heated with steam to a boiling point. The product is distilled via a continuous column distillation process. This process gives the product its pure, natural flavor and saves energy and resources.
The spirit is blended with Snake River water and a proprietary mixture of organic ingredients. It undergoes a four-step charcoal filtration process to ensure the integrity and purity of the spirit. It is then hand-bottled.
